Spinach and Egg Sweet Potato Toast

This interesting combination will soon become one of your favorite breakfast (or anytime) meals. I mean, just look at it! Best of all, there are only 5 ingredients and it couldn't be easier to prepare.

Skip the gluten and get some vitamin C with this healthy sweet potato toast recipe. Topped with spinach, egg and a dash of hot sauce, it's a delicious alternative to eggs Benedict.


  • 1 large slice sweet potato ( ¼ inch thick)

  • ⅓ cup cooked spinach

  • 1 large egg, fried or poached

  • ½ teaspoon sliced fresh chives

  • ½ teaspoon hot sauce



  • Prep: 10 minutes

  • Ready In 20 minutes

Toast sweet potato in a toaster, toaster oven or air fryer until just cooked through and starting to brown, 12 to 15 minutes. Top with spinach, egg, chives and hot sauce.
